SignatureHandmade tortillas
“The tortillas were UNREAL.” — Alex K.

A roadside palapa where hand-pressed tortillas hit the comal, watermelon gets pressed to order, and dinner runs until the last star settles over the savannah.
The kitchen
Happy Ranch sits at the edge of Santa Cruz — an open-air palapa where the light changes every hour and the tortillas keep coming off the comal. Two cooks, one grill, everything pressed and pulled fresh when you order.
We keep the menu tight because the ingredients are the point: beans slow-simmered from dry, watermelons split minutes before pressing, tortillas that guests keep telling us are unreal.

“We stopped in for a quick lunch of tostadas, and came back on the return trip for dinner. This place has incredible food. Very easy to hang out here.”
